Originally from Meursault in Burgundy, he has established himself as one of the leading talents of his generation. Head sommelier at the Hôtel de Crillon in Paris since 2017, he oversees an impressive wine cellar and a demanding yet sensitive approach to wine.

paulée d'anjou
Fourteen years ago, a few winemakers from Saint-Lambert-du-Lattay, Thouarcé, Chaudefonds-sur-Layon and Savennières gathered around a table. No elaborate organization, no speeches — just wine, laughter, and the desire to share.
This was the birth of the Paulée de l'Anjou Noir.
Since then, much has changed. Anjou Blanc joined the schist appellation in 2019. Bourgueil and Saint-Nicolas-de-Bourgueil have also entered the scene. And above all—a new generation of winemakers has settled in these lands, drawn by their unique character, the energy they exude, and a meaningful approach to winemaking.
The number of installations in recent years has been phenomenal. And that's something we can all be truly proud of.
This year, the Paulée returns to Anjou Noir, where it all began. And it does so under the banner of transmission — a word that perhaps sums up better than any other what this territory embodies.
